Method

    Beat eggs and season with white pepper. Heat wok on high until smoking. Add 1 tbsp oil, scramble eggs until just set, push to side.

    Add remaining oil. Add garlic and ginger, stir-fry 30 seconds until fragrant. Add beef mince and cook 4–5 minutes, breaking it up until browned and cooked through.

    Add cold rice. Toss constantly on high heat for 3–4 minutes until rice grains separate and start to crisp.

    Cold rice is non-negotiable — freshly cooked rice goes mushy.

    Add soy sauce, oyster sauce, and sesame oil. Toss to coat. Add frozen peas and most of the spring onion. Toss another minute.

    Taste and adjust seasoning. Serve immediately topped with remaining spring onion.
